Open the tin and heat the entire contents in a bain-marie. When the pieces are thoroughly heated, remove the pieces as desired for each portion and place on a dish.

It can also be prepared in a convection oven as follows: Place the cheeks on a tray with the gelatine after separating from the duck fat and bake at 120ºC during 3 to 5 minutes.
